Elk

Ostrich

The most important thing to know about cooking Ostrich: don’t overcook it. Like all very lean red meats, it dries out quickly past medium. Sear it hard in a hot pan or over direct heat, pull it to medium-rare or medium, rest it well, and slice it thin. Done right, it’s remarkable.
Best for: Pan searing, high-heat grilling, thinly sliced over salads or in sandwiches.
Kangaroo
Kangaroo sirloin is one of the leanest red meats on the planet — lower in fat than chicken breast, higher in protein than beef, and with a rich, slightly gamey flavor that pairs beautifully with bold herbs and sauces.
